Cheesy Zucchini Slice

This drool-worthy slice is proof that postpartum nourishment doesn’t need to be fancy. This simple but nutritious, one-handed snack ticks all the boxes for postpartum nourishment and it's absolutely delicious too.

INGREDIENTS
60g olive oil plus extra for onion
120g cheddar cheese, grated
1 large or two medium zucchini, grated
1 large carrot, grated
1 brown onion, diced
5 eggs
100g spelt flour
Decent pinch of salt, dash of pepper

METHOD
1. Grease and line a baking dish. Preheat oven to 180 degrees Celsius.
2. Gently soften onions in a splash of olive oil in a frypan, over low/medium heat.
3. In a large bowl, add cooked onions and all your other wet ingredients and mix well to combine.
4. Now add dry ingredients and mix again.
5. Pour mixture into lined baking dish/tin and bake for 30 mins or until golden brown and puffed up.
6. Leave to cool before slicing (tip: pop in the fridge overnight before slicing and eating). 
7. Pour yourself a Hydramama, enjoy a tasty treat and refuel.
