Crispy Gnocchi Pesto Salad
A simple, tasty recipe the whole family will definitely enjoy. A quick throw together meal, full of delicious flavours. And the best part? You can wrangle and bath the kids, or just relax with Netflix, while it cooks.
Ingredients:
1 bag of gnocchi
3 tbs sun-dried tomatoes
3 tablespoons olives
1/3 red onion
Feta
Handful of baby spinach
3
Salt
Olive Oil
Method:
1. Cook gnocchi as per packet instructions. Once ready, rinse and lay them on a baking tray. Drizzle over some olive oil and sprinkle on some salt.
2. Bake on 180 degrees for 20 minutes. Remove from oven and use a spatula to flatten the gnocci into chips. Toss to season them some more from the oils in the tray. Return to oven and bake until golden and crispy.
3. In a bowl, add sliced red onion, olives, sun-dried tomatoes, baby spinach and pesto. Combine until evenly coated in pesto.
4. Once gnocchi is ready, add to the salad and combine.
5. Sprinkle over some crumbled feta.
6. Serve with a refreshing cold glass of Hydramama.
