You will need
• 1 cup filtered water
• 3 tbsp grass-fed gelatin powder
• 200g honey
• 1 tsp Krumbled Foods Vanilla Collagen Peptides (sub chocolate or mixed berry for flavoured marshmallows)
• ¼ tsp salt
How to make it
Conventional Method

Prepare your tin: Lightly grease a 26cm x 19cm baking dish with coconut oil and line with baking paper (leave some overhanging for easy lifting).

Cook syrup: In a saucepan, combine water and gelatin. Add honey, vanilla and salt. Whisk over medium heat for 7–10 minutes, until fully dissolved and slightly thickened.

Cool: Pour mixture into a stand mixer bowl and let it cool to room temp. Add collagen peptides.

Whip: Using the whisk attachment, beat on low and slowly increase speed. Whip for 5–7 minutes until soft glossy peaks form.

Set: Pour into the prepared tin, smooth the top, and freeze for 30 minutes or until set.

Cut: Remove from dish and slice into 4cm squares.
Thermomix Method

Prepare tin: Grease and line a 26cm x 19cm dish.

Bloom gelatin: Add water to bowl and sprinkle gelatin across the surface.

Add ingredients: Add honey, vanilla and salt. Insert butterfly whisk.

Cook: TM5/TM6: 15 min / 115°C / speed 1 or TM31: 15 min / Varoma / speed 1
Note: If foaming, reduce to 100°C then raise again. -
Cool: Allow to cool to ~37°C. Add collagen and colourings (optional).

Whip: With butterfly in, whip 5–7 min / speed 4 until thick and fluffy.

Set: Pour into tin and freeze for 30 minutes.

Cut: Lift out and slice into 4cm pieces.
Tips & Notes
• Dust cut marshmallows in arrowroot powder to stop sticking
• Use natural powders (e.g. beetroot, blue spirulina) for colour
• Grass-fed gelatin is rich in glycine + proline—great for gut, skin and joints
