Puffed Choc Quinoa Bars

These No-Bake Choc Quinoa Bars are a game changer. Naturally sweetened with Medjool dates, they’re loaded with crunchy puffed quinoa and topped with a silky layer of our No Added Sugar Milk Choc Buttons.

You Will Need

Filling

• 2 cups Medjool dates

• 1 1/2 cups Puffed Quinoa

• 2 tablespoons Almond Pecan Butter

• 1 tablespoon Coconut Oil

• 1 teaspoon vanilla essence

• Pinch of salt

Chocolate Top

• 150g Milk Choc Buttons

• 1 teaspoon Coconut Oil


How to make it

  1. Soak dates in hot water for 5 minutes. Then drain.

  2. Combine dates, almond butter, coconut oil, vanilla essence and salt in a food processor until smooth.

  3. Fold in Puffed Quinoa.

  4. Press mixture into silicone slice moulds (or line tray with baking paper if using a baking tray).

  5. Melt Milk Choc buttons and 1 tablespoon coconut oil in a non stick saucepan on low until all melted. Pour and spread evenly.

  6. Refrigerate until firm.

  7. Enjoy!
