Creamy Vanilla Chia Pudding

It’s simple to make, ideal for those grab and go moments or if you’ve hit snooze one (or two) too many times. The perfect summer snack and a great way to kick start your day with everything you need for healthy hair, skin and nails.

This glow-boosting breakfast is packed with all the essentials to help you stay fuelled throughout the day. You will need

• 1/3 cup chia seeds
• 1 ½ – 2 cups organic coconut milk (alternatively almond milk or coconut water)
• 1 scoop Vanilla Collagen Peptides
• 1 tbsp ground cinnamon

Toppings
• Shredded coconut
• Handful of raspberries
• Chopped macadamias

 

How to make it

You can prepare your chia in either a bowl, or a jar (with a lid).

  1. Combine all base ingredients and stir till well combined.
    Note: Don’t worry if it seems too liquidy as the chia seeds will expand and soak up the liquid. If you find your mix is too thick, add in a touch more liquid, give it another mix and pop it in the fridge overnight.
  2. At the one hour mark, we like to go back to the fridge and give it another quick shake or whisk, so the chia doesn’t sink to the bottom.
  3. In the morning, top with your favourite toppings. With the creamy coconut base, we love to top it with fresh raspberries, chopped macadamias and shredded coconut. Enjoy!
