You Will Need
Fruit Layer
• 2 large ripe mangoes (about 2 cups flesh or about 350g frozen mango)
• 2 tbsp maple syrup or honey (optional, adjust to fruit sweetness)
• 1 tbsp lemon juice
• 1 sachet Tropical Hydramama
Coconut Creamy Layer
• 1 ½ cups full-fat coconut cream (from a can, chilled)
• 2 tbsp vanilla collagen peptides
• 1–2 tbsp maple syrup or honey
• 1 tsp vanilla extract
• Pinch of sea salt
How To Make It

Blend mango flesh, lemon juice, sweetener, and Hydramama until silky smooth.
Taste and adjust sweetness if needed.

In a bowl, whisk together coconut cream, maple syrup, vanilla, and salt until smooth.
- In silicone ice cream bar molds, spoon in a layer of mango mix. Set in the freezer for 2 hours and then pour on the coconut cream layer.
- Freeze for 6+ hours or ideally overnight.

Pop out of molds and let sit for 2–3 minutes before eating for the best texture.
