White Choc Raspberry Rocky Road

This is rocky road reimagined. Think creamy no added sugar white chocolate, toasted coconut, and bursts of berry from our cult-favourite White Choc Raspberry Beauty Bites. It’s the kind of treat you’ll want to keep hidden in the fridge just for you.

With just a few simple ingredients and 10 minutes of prep, this recipe is perfect for school holidays, Sunday meal prep, or a cheeky after-dinner bite that comes with a collagen boost.

You will need

• 200g Krumbled Foods No Added Sugar White Choc Buttons

• 2 tbsp Coconut Oil

• 2 White Choc Raspberry Beauty Bites, chopped into chunks

• ½ cup Macadamias or Cashews

• ⅓ cup Coconut Flakes (toasted for extra flavour)

• 1 cup Collagen Marshmallows

• Pinch of sea salt

 

How to make it

  1. Melt the white choc buttons and coconut oil using a double boiler until smooth.

  2. Take off the heat and fold through the nuts, chopped Beauty Bites, coconut flakes and marshmallows. Sprinkle in a little sea salt.

  3. Pour into a lined slice tin and spread evenly with a spoon.

  4. Set in the fridge for 1–2 hours.

  5. Slice into squares and store chilled for up to 14 days.
