Collagen French Toast Bake

This Collagen French Toast Bake takes a brunch favourite and turns it into a nourishing, make-ahead delight. Thick slices of bread are infused with our Vanilla Collagen Peptides, then baked until golden and fluffy. Perfect for slow mornings, special occasions, or meal-prep breakfasts that feel indulgent yet wholesome.

 

You Will Need

• 1 loaf of gluten-free or sourdough bread, chopped into bite-size cubes

• 6 large eggs

• 1 cup milk of choice (e.g. full cream, almond, oat)

• 2 tbsp maple syrup

• 1 tbsp vanilla extract

• 1 tsp ground cinnamon

• 3 tbsp Krumbled Foods Vanilla Collagen Peptides

Optional toppings: fresh berries, Greek yoghurt, extra maple syrup


How To Make It

  1. Preheat oven to 180°C (350°F). Lightly grease a medium baking dish.

  2. In a large bowl, whisk together the eggs, milk, maple syrup, vanilla extract, cinnamon, and collagen peptides until smooth.

  3. Add the chopped bread into the egg mixture and stir to coat all pieces evenly.

  4. Let the mixture sit for 5–10 minutes to allow the bread to soak up the liquid.

  5. Pour the mixture into the prepared baking dish and spread evenly.

  6. Bake for 30–35 minutes, or until golden on top and firm in the centre.

  7. Let cool slightly before serving. Top with fresh berries, yoghurt, or maple syrup if desired.


Tips

  1. Use day-old or slightly stale bread for best texture.

  2. You can prep this the night before and refrigerate overnight, just bake in the morning.

  3. For extra protein, serve with a scoop of Greek yoghurt on the side.
