You Will Need
• 1 loaf of gluten-free or sourdough bread, chopped into bite-size cubes
• 6 large eggs
• 1 cup milk of choice (e.g. full cream, almond, oat)
• 2 tbsp maple syrup
• 1 tbsp vanilla extract
• 1 tsp ground cinnamon
• 3 tbsp Krumbled Foods Vanilla Collagen Peptides
• Optional toppings: fresh berries, Greek yoghurt, extra maple syrup
How To Make It
-
Preheat oven to 180°C (350°F). Lightly grease a medium baking dish.
-
In a large bowl, whisk together the eggs, milk, maple syrup, vanilla extract, cinnamon, and collagen peptides until smooth.
-
Add the chopped bread into the egg mixture and stir to coat all pieces evenly.
-
Let the mixture sit for 5–10 minutes to allow the bread to soak up the liquid.
-
Pour the mixture into the prepared baking dish and spread evenly.
-
Bake for 30–35 minutes, or until golden on top and firm in the centre.
-
Let cool slightly before serving. Top with fresh berries, yoghurt, or maple syrup if desired.
