Hearty Chicken Stew

You will need

• 200ml passata
• 1 can diced tomatoes
• 1 can kidney beans, rinsed
• 1 handful fresh rocket
• 1 onion, diced
• 3 large cloves garlic, chopped
• 2 carrots, diced
• 1 tbsp vegetable stock paste
• 1 large chicken breast, diced
• 1 cup chicken bone broth
• 1 tbsp ghee
• Salt and pepper, to taste

 

How to make it

  1. In a large pot over medium-high heat, melt the ghee. Add the diced chicken and cook until sealed on all sides. Stir in the onion and garlic, cooking until soft and fragrant.
  2. Reduce heat to medium and pour in the passata, diced tomatoes, stock paste, bone broth, salt, and pepper. Stir well to combine.
  3. Add the carrots, kidney beans, and fresh rocket, stirring until evenly coated. Lower the heat and let the stew simmer, covered, for an hour—stirring occasionally to let the flavours develop.
  4. Serve warm with creamy mashed potatoes, a side of green beans and a glass of Hydramama. Enjoy!
