These soft, fluffy bites are the perfect balance of indulgence and nourishment. With a hint of vanilla, a boost of Collagen for glow-from-within goodness, and a rich chocolatey topping finished with coconut, this recipe is a family favourite with benefits.
You will need
Slice
• 125g softened unsalted butter
• 3/4 cup caster sugar (or coconut sugar)
• 1 teaspoon vanilla extract
• 2 eggs
• 1 cup gluten free plain flour
• 2 tablespoons Collagen (Vanilla)
• 1 teaspoon baking powder
• 1/2 cup Almond Milk
Topping
• 3/4 cup icing sugar
• 2 tablespoons cocoa powder
• 20g unsalted butter
• 1 tablespoon hot water
• 1/2-1 cup shredded coconut
How to make it

Preheat oven to 160.

Place softened butter, sugar, vanilla in a bowl and mix with an electric mixer until creamy. Mix in eggs until combined.

Add flour, Collagen, baking powder, then mix in almond milk.

Pour into a baking paper lined tin (approx 20 x 20cm).

Bake for 20mins or until cooked when tested with a skewer.

Mix icing sugar, cocoa powder, melted butter and hot water in a bowl, then pour over the warm base. Top with shredded coconut.
