This recipe is on repeat in the homes of our Krumbled team. Perfect for lunchboxes, afternoon snacks or straight out of the oven nibbling, this delicious twist on a classic won’t last long (trust us).
You will need
Makes 15-20 cookies
• 2 cups almond meal
• 1/3 cup maple syrup
• 1 tsp baking soda
• 1 egg, cracked and whisked
• 1 tsp vanilla extract
• ½ cup No Added Sugar White Chocolate Melts, chopped
• 1/4 cup macadamias, roughly chopped
• ½ cup extra virgin olive oil
• Big pinch of flaked sea salt
How to make it
1. Preheat oven to 175 degrees fan forced. Line a tray with baking paper and pop aside.
2. In a large bowl, whisk olive oil, egg and maple syrup together until smooth.
3. Stir in the dry ingredients until well combined and a dough has formed. Fold in the chocolate melts and macadamias. Leave to rest for 5 minutes.
4. Scoop dough into 1 1/2 tablespoon-sized balls and roll with your hands to make them smooth. Place cookies on baking sheet. Sprinkle tops with flaked salt and press in with chocolate melts if you desire!
5. Bake for 13 -15 minutes. Allow cookies to cool for at least 5 minutes before enjoying.
